Ingredients
  

1 cup cornmeal

1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk

2 large eggs

1/4 cup melted butter

1 cup corn (fresh, canned, or frozen)

1/2 cup shredded cheddar cheese (optional)

For Honey Butter Syrup:

1/2 cup unsalted butter, softened

1/4 cup honey

1/4 teaspoon cinnamon

Pinch of salt

Instructions
 

Preheat your waffle maker according to the manufacturer's instructions.

    In a large mixing bowl, whisk together cornmeal, flour, sugar, baking powder, and salt until well combined.

      In a separate bowl, whisk together buttermilk, eggs, and melted butter until smooth.

        Pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

          Fold in the corn and cheddar cheese if using.

            Lightly grease the waffle maker with non-stick spray or brush it with some melted butter.

              Scoop about 1/4 to 1/3 cup of the cornbread batter onto the preheated waffle maker (or more, depending on the size of your waffle maker). Close the lid and cook according to the manufacturer’s instructions, usually for about 3-5 minutes, until golden brown and cooked through.

                Remove the waffle bites and keep them warm in a preheated oven at 200°F (95°C) while you finish cooking the rest of the batter.

                  For the honey butter syrup, combine softened butter, honey, cinnamon, and a pinch of salt in a bowl. Whip together until well combined and creamy. Adjust sweetness by adding more honey if desired.

                    Serve the cornbread waffle bites warm with a generous drizzle of honey butter syrup on top and enjoy!
