Ingredients
  

1 lb. ground beef or turkey

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper, chopped (any color)

2 carrots, diced

2 celery stalks, diced

1 can (15 oz) diced tomatoes (with juices)

1 can (15 oz) tomato sauce

2 cups beef or vegetable broth

1 can (15 oz) kidney beans, drained and rinsed

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

Fresh cilantro, for garnish

Optional: Sour cream and shredded cheese for serving

Instructions
 

In a large pot or Dutch oven, brown the ground beef or turkey over medium heat. Stir occasionally until fully cooked, about 5-7 minutes. Drain excess fat if necessary.

    Add the chopped onion and minced garlic to the pot. Sauté for about 2-3 minutes until the onion becomes translucent.

      Stir in the chopped bell pepper, diced carrots, and diced celery. Cook for another 3-4 minutes, allowing the vegetables to soften.

        Add the diced tomatoes (with juices), tomato sauce, and broth to the pot. Stir well to combine.

          Mix in the kidney beans, chili powder, cumin, paprika, salt, and pepper. Bring the soup to a gentle simmer.

            Reduce the heat to low and let the soup cook uncovered for about 20-25 minutes, stirring occasionally.

              Taste and adjust seasoning if necessary. If the soup is too thick, add a little more broth or water to reach your desired consistency.

                Serve hot, garnished with fresh cilantro. Optionally, add a dollop of sour cream and a sprinkle of shredded cheese on top.
