2 pounds beef chuck, cut into 1-inch cubes

1 tablespoon olive oil

1 onion, diced

3 cloves garlic, minced

2 cups beef broth

1 cup mushrooms, sliced

1 tablespoon Worcestershire sauce

1 tablespoon soy sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

1 cup carrots, sliced

1 cup frozen peas

12 ounces egg noodles

Sear the Beef: In a large skillet over medium-high heat, heat the olive oil. Season the beef cubes with salt and pepper. Brown the beef on all sides, transferring to the crockpot once done.

    Sauté Aromatics: In the same skillet, add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute. Transfer this mixture to the crockpot.

      Add Remaining Ingredients: Pour the beef broth into the crockpot, then stir in the mushrooms, Worcestershire sauce, soy sauce, thyme, rosemary, and carrots. Mix everything gently to combine.

        Cook: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.

          Cook the Noodles: About 30 minutes before serving, cook the egg noodles according to package instructions. Drain and set aside.

            Stir in Peas: Once the beef is tender, add the frozen peas to the crockpot and stir gently. Let them cook for an additional 10-15 minutes.

              Serve: Serve the beef tips over a bed of the egg noodles, garnishing with additional herbs if desired.
