Ingredients

For the Coffee Loaf Cake:

1 ½ cups all-purpose flour

1 cup finely chopped walnuts

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

¾ cup strong brewed coffee, cooled

2 tbsp instant coffee granules

For the Rich Espresso Glaze:

1 cup powdered sugar

2 tbsp brewed espresso (or strong coffee)

1 tsp milk (adjust for desired consistency)

1 tsp vanilla extract

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.

Prepare Dry Ingredients: In a mixing bowl, combine flour, baking powder, baking soda, and salt. Mix well and set aside.

Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.

Add Eggs and Vanilla: Beat in the eggs, one at a time, then stir in the vanilla extract.

Combine Coffee and Instant Coffee: Dissolve the instant coffee granules into the cooled strong brewed coffee. Gradually mix this into the butter mixture.

Combine Wet and Dry Ingredients: Alternate between adding the dry ingredient mixture and the coffee mixture to the creamed butter and sugar, starting and ending with the dry ingredients. Mix just until combined.

Fold in Walnuts: Gently fold in the chopped walnuts until evenly distributed throughout the batter.

Bake the Cake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.

Cool the Cake: Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Prepare the Glaze: In a small bowl, whisk together the powdered sugar, brewed espresso, milk, and vanilla extract until smooth and pourable. Adjust the milk amount for desired thickness.

Glaze the Cake: Once the loaf cake has completely cooled, drizzle the rich espresso glaze over the top, allowing it to drip down the sides.

Serve and Enjoy: Slice the cake and serve with a cup of coffee or tea. Enjoy the delicious blend of coffee and walnut flavors!
