2 cups unsweetened shredded coconut

1 cup sweetened condensed milk

1 teaspoon vanilla extract

½ teaspoon almond extract (optional)

1 cup white chocolate chips

1 tablespoon coconut oil

Pinch of salt

Extra shredded coconut for rolling

Prepare the Coconut Mixture: In a medium bowl, combine the unsweetened shredded coconut, sweetened condensed milk, vanilla extract, almond extract (if using), and a pinch of salt. Mix well until all ingredients are well incorporated.

    Chill the Mixture: Cover the bowl with plastic wrap and refrigerate for about 30 minutes. This will help the mixture firm up, making it easier to shape.

      Shape the Snowballs: Once the mixture is chilled, take about a tablespoon of the mixture and roll it into a ball between your palms. Repeat until all the mixture is shaped into small balls. You should get about 18-20 snowballs.

        Prepare for Coating: Place extra shredded coconut on a plate or shallow dish.

          Melt the Chocolate: In a microwave-safe bowl, combine the white chocolate chips and coconut oil. Microwave in 30-second intervals, stirring after each interval until the chocolate is completely melted and smooth.

            Coat the Snowballs: One at a time, dip each coconut ball into the melted white chocolate, allowing any excess to drip back into the bowl. Then roll the chocolate-covered ball in the shredded coconut to coat it completely.

              Set the Snowballs: Place the coated snowballs on a parchment-lined baking sheet. Repeat the process with the remaining balls.

                Finish and Chill Again: Once all the snowballs are coated, refrigerate them for an additional 30 minutes to set the chocolate.
