1 lb large shrimp, peeled and deveined (tails on)

1 cup shredded sweetened coconut

1/2 cup Panko breadcrumbs

1/4 cup all-purpose flour

2 large eggs

1/2 teaspoon garlic powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Vegetable oil (for frying)

Fresh lime wedges (for serving)

Sweet chili sauce (for dipping)

Prepare the Breading Stations:

    Set up three separate bowls. In the first bowl, mix the flour with garlic powder, paprika, salt, and pepper. In the second bowl, whisk the eggs until smooth. In the third bowl, combine the shredded coconut and Panko breadcrumbs.

      Coat the Shrimp:

        Take each shrimp and dip it first into the flour mixture, ensuring it’s fully coated. Shake off any excess flour and then dip it into the beaten eggs. Finally, press the shrimp into the coconut-Panko mixture, coating it well. Repeat with all the shrimp.

          Heat the Oil:

            In a deep skillet or frying pan, heat about an inch of vegetable oil over medium-high heat. You can check if the oil is ready by dropping a small piece of bread into it; if it sizzles and bubbles, the oil is hot enough.

              Fry the Shrimp:

                Carefully place the coated shrimp into the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy. Use a slotted spoon to remove the shrimp and place them on a plate lined with paper towels to drain excess oil.

                  Serve:

                    Arrange the crispy coconut shrimp on a serving platter with fresh lime wedges. Serve with sweet chili sauce for dipping and enjoy your tropical treat!
