Coconut Macaroons – A Sweet Treat!

3 cups sweetened shredded coconut

1 cup sweetened condensed milk

2 large egg whites

1 teaspoon vanilla extract

1/4 teaspoon salt

8 ounces semi-sweet chocolate (for dipping, optional)

Preheat the Oven: Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper.

    Mix Coconut Ingredients: In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and salt. Stir until all ingredients are well combined.

      Whip Egg Whites: In a separate bowl, beat the egg whites with an electric mixer until stiff peaks form. This should take about 3–4 minutes.

        Fold Mixture: Gently fold the beaten egg whites into the coconut mixture. Be careful not to deflate the egg whites; you want to keep the mixture light and fluffy.

          Shape the Macaroons: Using a tablespoon or a small cookie scoop, drop heaping portions of the coconut mixture onto the prepared baking sheet, leaving about 1 inch of space between each mound.

            Bake: Bake in the preheated oven for 15-20 minutes, or until the macaroons are golden brown on the edges.

              Cool: Remove the baking sheet from the oven and let the macaroons cool on the sheet for about 10 minutes. Then transfer them to a wire rack to cool completely.

                Dip in Chocolate (optional): If you want to add chocolate, melt the semi-sweet chocolate in a microwave-safe bowl or using a double boiler. Once melted, dip the base of each macaroon into the chocolate, allowing excess to drip off. Place the dipped macaroons back on the wire rack until the chocolate hardens (you can refrigerate them to speed this up).
