1 pound large shrimp, peeled and deveined

1 cup coconut milk

2 tablespoons lime juice (freshly squeezed)

Zest of 1 lime

2 tablespoons honey or agave syrup

1 teaspoon garlic powder

1 teaspoon ginger powder

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon chili flakes (optional, for heat)

1 cup unsweetened shredded coconut

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes)

Marinate the Shrimp: In a large bowl, whisk together the coconut milk, lime juice, lime zest, honey, garlic powder, ginger powder, salt, black pepper, and chili flakes. Add the shrimp, making sure they're well coated. Cover and refrigerate for at least 30 minutes to 1 hour to allow the flavors to infuse.

    Prepare the Skewers: If using bamboo skewers, soak them in water for about 30 minutes. This prevents them from burning on the grill.

      Coat the Shrimp: After marinating, remove the shrimp from the marinade and allow the excess liquid to drip off. In a shallow dish, spread the shredded coconut. Roll each shrimp in the coconut, pressing gently to ensure the coconut adheres.

        Assemble the Skewers: Thread the coconut-coated shrimp onto the skewers. You can use two shrimp per skewer, leaving some space in between each for even cooking.
