1 ½ cups graham cracker crumbs

½ cup unsweetened shredded coconut

½ cup unsalted butter, melted

1 (8 oz) package cream cheese, softened

1 cup powdered sugar

1 (8 oz) container whipped topping (like Cool Whip), thawed

1 (3.4 oz) package of instant coconut cream pudding mix

2 cups cold milk

1 teaspoon pure vanilla extract

Toasted coconut flakes for garnish (optional)

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Crust:

    - In a medium bowl, combine graham cracker crumbs, shredded coconut, and melted butter. Stir until the mixture is well combined and resembles wet sand.

      - Press the mixture firmly into the bottom of a 9x13 inch baking dish to form a crust. Set aside.

        Make the Cream Cheese Layer:

          - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

            - Gradually add the powdered sugar and mix until well combined and fluffy.

              - Fold in half of the whipped topping gently until just combined. Spread this mixture evenly over the prepared crust.

                Prepare the Coconut Pudding Layer:

                  - In another bowl, whisk together the coconut cream pudding mix, cold milk, and vanilla extract for about 2 minutes, until it thickens.

                    - Pour the pudding over the cream cheese layer, spreading evenly with a spatula.

                      Add the Final Layer:

                        - Top the pudding layer with the remaining whipped topping, smoothing it out evenly over the surface.

                          Chill:

                            - Cover the dish with plastic wrap or foil and refrigerate for at least 4 hours or until set for a more enjoyable texture.

                              Serve:

                                - Before serving, sprinkle toasted coconut flakes on top for an added crunch, and garnish with fresh mint leaves if desired.

                                  - Slice into squares and serve chilled.
