1 cup popcorn kernels (or about 12 cups popped popcorn)

1 cup granulated sugar

1/4 cup unsalted butter

1/4 cup light corn syrup

1/2 teaspoon salt

1/4 teaspoon baking soda

1 teaspoon vanilla extract

1 cup shredded sweetened coconut

Optional: pinch of cinnamon or nutmeg for added warmth

Pop the Popcorn: Pop your popcorn kernels using an air popper, stovetop, or microwave until you have about 12 cups of popped popcorn. Spread the popcorn on a large baking sheet lined with parchment paper. Make sure to remove any unpopped kernels.

    Prepare the Caramel: In a medium saucepan, combine the granulated sugar, butter, corn syrup, and salt. Cook over medium heat, stirring constantly until the mixture begins to boil. Once boiling, stop stirring and let it cook for an additional 4-5 minutes, or until the caramel turns a nice golden color.

      Add Flavorants: Remove the saucepan from heat and quickly whisk in the baking soda, vanilla extract, and optional spices (if using). The mixture will bubble up; be careful!

        Mix in Coconut: Immediately stir in the shredded coconut until well combined.

          Coat the Popcorn: Pour the caramel-coconut mixture over the popcorn on the baking sheet. Use a spatula or wooden spoon to gently stir and coat the popcorn evenly.

            Bake: Preheat your oven to 250°F (120°C). Bake the coated popcorn in the oven for 45 minutes, stirring every 15 minutes to ensure even coating and crunchiness.

              Cool Down: Once out of the oven, let the popcorn cool completely on the baking sheet. Break apart any clumps before serving.
