Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1/4 cup unsalted butter, cold and cubed

3/4 cup buttermilk, plus extra for brushing

1 tablespoon honey (optional, for sweetness)

Instructions

Preheat the Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

Cut in the Butter: Using a pastry cutter or your fingertips, cut the cold cubed butter into the flour mixture until it resembles coarse crumbs. Remember, it’s okay to have small chunks of butter as these create flaky layers.

Add Buttermilk: Make a well in the center of the dry ingredients and pour in the buttermilk and honey (if using). Gently stir until just combined – be careful not to overmix; the dough should be slightly sticky.

Knead Lightly: Turn the dough out onto a lightly floured surface. With floured hands, pat the dough into a rectangle about 1-inch thick. Fold the dough over itself three times to create layers.

Cut the Biscuits: Using a floured biscuit cutter (or a glass), cut out biscuits and place them on the prepared baking sheet. The closer you can place them together, the taller and fluffier they’ll rise.

Brush with Buttermilk: Brush the tops of the biscuits with a little buttermilk for a beautiful golden finish.

Bake: Bake in the preheated oven for 12-15 minutes or until golden brown on top. Keep an eye on them to avoid overbaking.

Cool and Serve: Remove biscuits from the oven and let them cool on a wire rack for a few minutes. Serve warm with butter, jam, or your favorite gravy.
