4 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

4 large eggs

1 cup sour cream

2 tablespoons all-purpose flour

Zest of 1 lemon (optional for flavor)

For the Topping:

1 cup sour cream

2 tablespoons powdered sugar

½ teaspoon vanilla extract

Fresh berries for garnish (optional)

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium bowl, combine the graham cracker crumbs, granulated sugar, melted butter, and vanilla extract. Mix until well combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then set aside to cool.

          Make the Filling:

            - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

              - Gradually add the granulated sugar and continue to beat until well combined and fluffy.

                - Mix in the vanilla extract, followed by each egg one at a time, ensuring that each egg is fully incorporated before adding the next.

                  - Stir in the sour cream, all-purpose flour, and lemon zest (if using) until smooth and fully combined.

                    Combine and Bake:

                      - Pour the cream cheese mixture over the cooled crust in the springform pan.

                        - Bake the cheesecake in the preheated oven for 60-70 minutes or until the edges are set and the center has a slight jiggle (it will firm up while cooling).

                          - Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour to prevent cracking.

                            Prepare the Topping:
