4 tablespoons unsalted butter

1 tablespoon olive oil

4 cloves garlic, minced

8 cups beef broth (or a mix of beef and chicken broth)

1 cup dry white wine (such as Sauvignon Blanc)

1 tablespoon Worcestershire sauce

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and freshly ground black pepper, to taste

1 baguette, sliced into 1-inch thick pieces

2 cups grated Gruyère cheese (or a mix of Gruyère and Swiss cheese)

Fresh parsley, chopped (for garnish)

Caramelize the Onions: In a large heavy-bottomed pot or Dutch oven, melt the butter and olive oil over medium heat. Add the sliced onions and sprinkle with sugar. Cook the onions, stirring frequently, for about 30-40 minutes until they are deeply golden brown and caramelized. Be patient; the longer they cook, the richer the flavor.

    Add Garlic and Deglaze: Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant. Pour in the white wine, scraping the bottom of the pot to deglaze and release any flavorful browned bits. Bring to a simmer and let the wine reduce by half.

      Add Broth and Seasonings: Pour in the beef broth and Worcestershire sauce. Stir in the thyme, and season with salt and pepper to taste. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 30 minutes. Adjust seasoning as needed.
