2 cups fresh cherries, pitted and halved

1 cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 tablespoons powdered sugar

1 teaspoon almond extract

1 package (8 ounces) cream cheese, softened

1/2 cup sour cream

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

Optional: fresh mint leaves for garnish

Prepare the Cherry Filling: In a medium saucepan, combine the pitted cherries, granulated sugar, lemon juice, and cornstarch over medium heat. Stir gently and cook until the mixture starts to bubble and thicken, about 5-7 minutes. Remove from heat and stir in vanilla extract. Let it cool to room temperature.

    Make the Crust: In a mixing bowl, combine graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated. Press the mixture into the bottom of a 9-inch springform pan to form an even crust. Chill in the refrigerator while preparing the filling.

      Prepare the Cream Cheese Layer: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add sour cream and mix until well combined.

        Whip the Cream: In a separate bowl, whip the heavy cream and powdered sugar with almond extract until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.

          Assemble the Dessert: Spread the cream cheese mixture over the chilled graham cracker crust evenly. Carefully spoon the cooled cherry filling on top of the cream cheese layer, spreading it evenly.
