1 lb breakfast sausage, casing removed

8 large eggs

2 cups milk

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon Dijon mustard

2 cups frozen hash browns, thawed

1 cup shredded sharp cheddar cheese

1/2 cup chopped green onions (optional)

1 cup diced bell peppers (red or green, optional)

Cooking spray or butter for greasing the dish

Instructions
 

Preheat your oven to 375°F (190°C). Grease a 9x13 inch casserole dish with cooking spray or butter.

    In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked, breaking it up into crumbles as it cooks. Drain excess grease if necessary and set aside.

      In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, and Dijon mustard until well combined.

        Spread the thawed hash browns evenly across the bottom of the greased casserole dish. Layer the cooked sausage over the hash browns.

          Pour the egg mixture over the sausage and hash browns. Gently stir to ensure even distribution.

            Sprinkle the shredded cheddar cheese evenly over the top. Add chopped green onions and bell peppers if using.

              Bake in the preheated oven for 30-40 minutes, or until the eggs are set and the cheese is bubbly and golden.

                Remove from the oven and let it cool for 5-10 minutes before slicing. Serve warm and enjoy!
