1 lb beef sirloin, sliced into thin strips

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz mushrooms, sliced

1 teaspoon Dijon mustard

1 tablespoon Worcestershire sauce

2 cups beef broth

1 cup sour cream

2 tablespoons all-purpose flour

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (for garnish)

12 oz egg noodles or your choice of pasta

Instructions
 

Cook the Noodles: Start by boiling a large pot of salted water. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Sear the Beef: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the beef strips with salt and pepper. Add them to the skillet in batches, searing for 2-3 minutes until browned, then remove and set aside.

      Sauté Onions and Garlic: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for another minute until fragrant.

        Add Mushrooms: Stir in the sliced mushrooms and cook for about 5 minutes until they are browned and tender.

          Make the Sauce: Sprinkle the flour over the mushroom mixture and stir well to combine. Cook for an additional minute to remove the raw flour taste. Gradually pour in the beef broth while stirring continuously. Add the Dijon mustard and Worcestershire sauce, and bring the mixture to a simmer. Let it cook for 5-10 minutes until thickened.

            Finish with Sour Cream: Reduce the heat to low, and stir in the sour cream until well incorporated. Return the seared beef to the skillet, mixing gently until everything is heated through. Adjust seasoning with salt and pepper to taste.
