2 cups pecan halves

1/2 cup granulated sugar

1 tablespoon ground cinnamon

1/4 teaspoon cayenne pepper (optional, for a spicy kick)

1/2 teaspoon salt

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. This will prevent the pecans from sticking and make for easy cleanup.

    In a large mixing bowl, combine the granulated sugar, ground cinnamon, cayenne pepper (if using), and salt. Mix well until all dry ingredients are evenly distributed.

      In a separate bowl, whisk together the melted butter and vanilla extract until well blended.

        Pour the melted butter mixture over the pecans and stir to coat them evenly.

          Gradually add the sugar spice mixture to the pecans, tossing them to ensure that all the pecans are well-coated with the cinnamon sugar blend.

            Spread the coated pecans in a single layer on the prepared baking sheet, keeping them spaced apart to facilitate even roasting.

              Bake in the preheated oven for 15-20 minutes, stirring once halfway through to ensure an even golden color. Keep an eye on them, as they can burn quickly due to the sugar.

                Once golden and fragrant, remove the baking sheet from the oven and allow the pecans to cool completely on the sheet. They will become crisp as they cool.
