1 cup of milk

2 large eggs

2 tablespoons vanilla extract

2 teaspoons ground cinnamon

1/4 cup granulated sugar

8 slices of day-old bread (white or brioche works well), cut into cubes

1/4 cup unsalted butter, melted

1/2 cup brown sugar

1 tablespoon sugar (for topping)

1 teaspoon ground cinnamon (for topping)

A pinch of salt

Prepare the Muffin Tin: Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin with cooking spray or butter.

    Whisk Wet Ingredients: In a large mixing bowl, whisk together the milk, eggs, vanilla extract, ground cinnamon, granulated sugar, and a pinch of salt until well combined.

      Add Bread Cubes: Gently fold the cubed bread into the egg mixture, ensuring each piece of bread is well coated. Let it soak for about 10-15 minutes to absorb the liquid.

        Fill Muffin Cups: Once the bread has soaked, spoon the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.

          Prepare Cinnamon Sugar Topping: In a small bowl, mix together the brown sugar, sugar, and ground cinnamon for the topping. Sprinkle this mixture generously over the muffins.

            Drizzle with Butter: Drizzle the melted butter over the tops of the muffins to add a bit of richness and help them caramelize.

              Bake: Place the muffin tin in the preheated oven and bake for 25-30 minutes, or until the muffins are puffed and golden brown on top.

                Cool and Serve: Once baked, allow the muffins to cool in the tin for about 5 minutes, then remove them and place them on a wire rack to cool slightly. Serve warm, optionally garnished with maple syrup or whipped cream!
