Cinnamon Sugar French Toast Muffins

Ingredients
  

1 loaf of day-old French bread (or brioche), cut into 1-inch cubes

4 large eggs

1 cup whole milk

1/2 cup heavy cream

1/2 cup granulated sugar

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/4 cup unsalted butter, melted

1/2 cup brown sugar, packed

1 tablespoon cinnamon (for topping)

Optional: maple syrup for serving

Instructions
 

Preheat the oven to 350°F (175°C). Grease a standard muffin tin with cooking spray or butter.

    In a large bowl, combine the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and salt. Whisk until well blended and the sugar is dissolved.

      Add the cubed French bread to the egg mixture, and gently fold to coat all the pieces. Allow the mixture to sit for about 15 minutes, giving the bread time to soak in the custard.

        In a separate small bowl, mix together the melted butter, brown sugar, and cinnamon for the topping until well incorporated.

          Using a fork or your hands, fill each muffin cup approximately halfway with the soaked bread mixture. Drizzle a teaspoon of the brown sugar cinnamon mixture on top of each muffin.

            Top each muffin with remaining bread mixture until the cups are filled to about ¾ full. Finally, add more of the cinnamon sugar mixture on top, making sure each muffin is well-coated.

              Bake in the preheated oven for about 20-25 minutes or until the muffins are puffed, golden, and a toothpick inserted into the center comes out clean.

                Allow the muffins to cool in the pan for about 5 minutes, then remove them and let them cool on a wire rack for a few additional minutes.
