Ingredients
  

1 cup all-purpose flour

1/2 cup water

1/4 cup unsalted butter

1 tablespoon granulated sugar

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

2 large eggs

1/2 cup granulated sugar (for coating)

1 teaspoon ground cinnamon (for coating)

Vegetable oil (for frying)

Instructions
 

In a medium saucepan, combine water, butter, granulated sugar, salt, and ground cinnamon. Bring to a gentle boil over medium heat.

    Once the mixture boils, remove it from heat and add the flour all at once. Stir quickly until the dough forms a ball and pulls away from the sides of the pan.

      Let the dough cool for about 5 minutes before adding the eggs, one at a time, mixing well after each addition until fully incorporated and smooth.

        Heat vegetable oil in a deep frying pan to 350°F (175°C).

          Using a piping bag fitted with a star tip, pipe small churro bites (about 2 inches long) directly into the hot oil, cutting them off with scissors. Fry in batches for about 2-3 minutes on each side, until golden brown.

            Remove churros from oil and drain on paper towels.

              In a shallow bowl, mix the granulated sugar and ground cinnamon together for coating.

                While the churro bites are still warm, roll them in the cinnamon sugar mixture until fully coated.

                  Serve immediately, ideally with a side of melted chocolate or caramel sauce for dipping.
