Ingredients

1 sheet of pre-made pie crust (store-bought or homemade)

1/2 cup brown sugar

1 tablespoon ground cinnamon

1/4 cup unsalted butter, softened

1 cup powdered sugar

1-2 tablespoons milk (adjust for desired icing consistency)

1 teaspoon vanilla extract

Optional: Extra cinnamon for dusting

Optional: Sprinkles for decoration

Instructions

Prepare the Filling: In a small bowl, mix together the brown sugar and ground cinnamon until well combined.

Roll Out the Pie Crust: On a lightly floured surface, roll out the pie crust to about 1/8 inch thick. You can use a rolling pin for this.

Cut the Dough: Use a pizza cutter or a knife to cut the dough into rectangles (approximately 3x4 inches). You should get around 8 rectangles (2 per pop-tart).

Add the Filling: On half of the rectangles, spread about a teaspoon of softened butter, then sprinkle a generous layer of the cinnamon-sugar mixture on top. Leave a small border around the edges.

Seal the Poptarts: Place the remaining rectangles on top of the filled dough. Press the edges down with a fork to seal them and to create a decorative edge.

Prepare for Baking: Preheat your oven to 350°F (175°C). Place the pop-tarts on a parchment-lined baking sheet. Optionally, you can poke a couple of holes in the top of each pop-tart with a fork to allow steam to escape.

Bake: Bake in the preheated oven for 20-25 minutes, or until they are golden brown.

Make the Icing: While the pop-tarts are baking, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth. Add more milk if you want a thinner consistency.

Glaze the Poptarts: Once the pop-tarts are done baking, let them cool for a few minutes. Drizzle or spread the icing over the top of each pop-tart. If desired, dust with extra cinnamon and add sprinkles for decoration.

Serve: Enjoy your homemade cinnamon roll pop-tarts warm, or let them cool completely before storing in an airtight container.
