Cinnamon Roll Pancakes

Ingredients
  

1 cup all-purpose flour

2 tablespoons granulated sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk

1 large egg

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

Cinnamon Swirl Filling:

1/4 cup brown sugar

1 tablespoon ground cinnamon

2 tablespoons unsalted butter, softened

Cream Cheese Glaze:

4 oz cream cheese, softened

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

Instructions
 

Prepare the Cinnamon Swirl Filling:

    - In a small bowl, combine the brown sugar, ground cinnamon, and softened butter. Mix until well combined to form a paste and set aside.

      Make the Pancake Batter:

        - In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

          - In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.

            - Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.

              Cook the Pancakes:

                - Preheat a non-stick skillet or griddle over medium heat. Lightly grease if necessary.

                  - Pour about 1/4 cup of the pancake batter onto the skillet. Immediately use a spoon or piping bag to drizzle in a swirl of the cinnamon filling on top of the batter.

                    - Cook until bubbles form on the surface of the pancake (about 2-3 minutes), then carefully flip and cook for another 2-3 minutes until golden brown.

                      Prepare the Cream Cheese Glaze:

                        - In a small bowl, combine softened cream cheese, powdered sugar, milk, and vanilla extract. Mix until smooth and creamy. Adjust the milk to achieve desired consistency.

                          Serve:

                            - Stack the delicious cinnamon roll pancakes on a plate and drizzle with cream cheese glaze. Enjoy warm!
