2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon salt

½ cup unsalted butter, softened

1 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 cup Greek yogurt (or sour cream)

2 cups peeled, diced apples (such as Granny Smith or Honeycrisp)

½ cup chopped walnuts or pecans (optional)

Extra cinnamon sugar for topping (2 tablespoons sugar mixed with 1 teaspoon cinnamon)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan with butter or cooking spray.

    In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt. Set aside.

      In a large bowl, cream the softened butter and brown sugar together until light and fluffy, approximately 2-3 minutes.

        Beat in the eggs one at a time, followed by the vanilla extract.

          Stir in the Greek yogurt until well mixed. Gradually fold in the dry ingredients until just combined.

            Gently fold in the diced apples and nuts (if using) until evenly distributed throughout the batter.

              Pour the batter into the prepared loaf pan. Sprinkle the top with the cinnamon sugar mixture.

                Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.

                  Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
