1 cup granulated sugar

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon salt

¼ cup unsalted butter, softened

2 large eggs

1 cup unsweetened applesauce

1 teaspoon vanilla extract

1 ½ cups diced apples (such as Granny Smith or Honeycrisp)

½ cup chopped walnuts or pecans (optional)

Additional cinnamon and sugar for topping

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan with butter or non-stick spray.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking soda, ground cinnamon, and salt until evenly combined.

      Mix Wet Ingredients: In a separate bowl, cream the softened butter until smooth. Add the eggs, applesauce, and vanilla extract, mixing until well incorporated.

        Combine Ingredients: Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Be careful not to over-mix, as this will result in a denser bread.

          Fold in Apples and Nuts: Gently fold in the diced apples and chopped nuts (if using) into the batter until evenly distributed.

            Transfer to Pan: Pour the batter into the prepared loaf pan. In a small bowl, mix a tablespoon of sugar with a teaspoon of cinnamon and sprinkle it generously over the top of the batter for added flavor and crunch.

              Bake: Bake in the preheated oven for 55-65 minutes or until a toothpick inserted into the center comes out clean. If the top is browning too quickly, loosely cover it with aluminum foil for the last 15 minutes.

                Cool: Once done, remove from the oven and allow the bread to cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
