Ingredients
  

1 cup long-grain white rice

2 cups vegetable broth or water

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

Zest of 1 lime

1/4 cup fresh lime juice (about 2 limes)

1/2 cup fresh cilantro, chopped

Salt, to taste

Optional: sliced jalapeños for heat

Instructions
 

Rinse the rice under cold water until the water runs clear. This helps to remove excess starch for fluffier rice.

    In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

      Stir in the minced garlic and sauté for an additional minute, until fragrant.

        Add the rinsed rice to the saucepan, stirring well to coat the grains with oil and mix with the onion and garlic.

          Pour in the vegetable broth or water, and season with salt to taste. Bring the mixture to a boil.

            Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 15 minutes, or until the rice is tender and the liquid is absorbed.

              Remove the saucepan from heat and let it sit, covered, for an additional 5-10 minutes to steam the rice.

                Fluff the rice with a fork and add the lime zest, lime juice, and chopped cilantro. Stir gently to combine.

                  If desired, add sliced jalapeños for an extra kick, and adjust the salt if needed.

                    Serve warm as a side dish or enjoy it as a base for your favorite protein!
