Cilantro Lime Noodles

8 oz rice noodles (or any noodles of your choice)

1 cup fresh cilantro, chopped

1/4 cup lime juice (about 2-3 limes)

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon honey or agave syrup

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional for heat)

1/2 cup cherry tomatoes, halved

1/2 cup bell peppers, thinly sliced (any color)

1 green onion, chopped

Salt and pepper, to taste

Toasted sesame seeds, for garnish

Instructions
 

Cook the Noodles: Begin by boiling a pot of water. Once boiling, add the rice noodles and cook according to package instructions, usually about 6-8 minutes until tender. Drain and rinse under cold water to stop the cooking process.

    Prepare the Sauce: In a mixing bowl, whisk together the lime juice, soy sauce, sesame oil, honey or agave syrup, minced garlic, and red pepper flakes (if using). Mix well until the honey is fully dissolved. Set aside.

      Sauté the Veggies: In a large skillet, heat a little sesame oil over medium heat. Add the bell peppers and cherry tomatoes and sauté for about 3-4 minutes until they are just tender but still vibrant. Remove from heat.

        Combine Ingredients: In a large mixing bowl, add the cooked and rinsed noodles, sautéed veggies, and chopped cilantro. Pour the prepared sauce over the top.

          Toss to Combine: Gently toss everything together until the noodles and vegetables are evenly coated with the sauce. Season with salt and pepper to taste. Feel free to add more lime juice or soy sauce as desired.
