For the Churros:

1 cup water

2 tablespoons granulated sugar

1/2 teaspoon salt

1 cup all-purpose flour

2 large eggs

1 teaspoon vanilla extract

Vegetable oil, for frying

Cinnamon sugar (1/2 cup granulated sugar mixed with 2 tablespoons ground cinnamon)

For the Chocolate Dipping Sauce:

1 cup heavy cream

8 oz semi-sweet chocolate, chopped

1 tablespoon sugar (optional for sweetness)

1 teaspoon vanilla extract

Instructions
 

Prepare the Churro Dough:

    - In a saucepan over medium heat, combine water, sugar, and salt. Bring to a boil.

      - Remove from heat and stir in the flour until a ball forms. Allow it to cool slightly.

        - Once cooled, mix in the eggs one at a time, followed by the vanilla extract, until smooth and glossy.

          Preheat the Oil:

            - In a deep frying pan, heat vegetable oil to 350°F (175°C). Use enough oil to submerge the churros.

              Pipe the Churros:

                - Transfer the churro dough into a piping bag fitted with a star tip. Pipe long strips (about 6 inches) directly into the hot oil, cutting them with scissors or a knife.

                  Fry the Churros:

                    - Fry the churros in batches, cooking until golden brown on all sides, about 2-3 minutes per side. Remove and place on a paper towel to drain excess oil.

                      Coat in Cinnamon Sugar:

                        - While the churros are still warm, roll them in the cinnamon sugar mixture until fully coated.

                          Make the Chocolate Dipping Sauce:

                            - In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.

                              - Remove from heat, add the chopped chocolate, and let sit for 5 minutes. Stir until smooth and glossy. If desired, add sugar and vanilla extract to taste.
