1 cup all-purpose flour

1/2 cup water

1/2 cup whole milk

1/4 cup unsalted butter

2 tablespoons granulated sugar

1 teaspoon vanilla extract

1/2 teaspoon salt

2 large eggs

Vegetable oil (for frying)

1/2 cup granulated sugar (for coating)

1 tablespoon ground cinnamon

Chocolate sauce or caramel sauce (for dipping)

Instructions
 

Prepare the dough: In a saucepan, combine water, milk, butter, sugar, and salt. Bring to a boil over medium heat, stirring until the butter is melted.

    Mix in the flour: Once boiling, remove from heat and add the flour all at once, stirring vigorously until a dough forms. Return to low heat for about 1-2 minutes, stirring continuously until the dough pulls away from the sides of the pan.

      Add eggs: Allow the mixture to cool briefly, then beat in the eggs one at a time until fully incorporated and smooth. Stir in the vanilla extract.

        Heat the oil: In a deep pot or fryer, heat vegetable oil to 360°F (182°C). You'll need enough oil for deep frying.

          Shape the churros: Use a piping bag fitted with a star tip to pipe small balls (about 1 inch in diameter) of dough into the hot oil. Fry in batches, being careful not to overcrowd the pot.

            Fry until golden: Fry the churro poppers for 2-3 minutes or until they are golden brown and puffed. Remove with a slotted spoon and drain on paper towels.

              Coat in sugar: In a bowl, mix the 1/2 cup sugar and cinnamon together. While the churro poppers are still warm, toss them in the cinnamon sugar mixture until well coated.

                Serve: Arrange the churro poppers on a serving plate and serve warm with chocolate sauce or caramel sauce for dipping.
