Ingredients
  

1 cup all-purpose flour

1/2 cup water

1/4 cup unsalted butter

1 tbsp sugar

1/4 tsp salt

2 large eggs

1 tsp vanilla extract

Vegetable oil (for frying)

1/2 cup granulated sugar (for coating)

1 tsp ground cinnamon

Chocolate sauce (for dipping)

Instructions
 

In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat.

    Once boiling, remove from heat and stir in the flour until a ball forms.

      Allow the mixture to cool slightly, then add eggs one at a time, mixing well after each addition. Stir in the vanilla extract until smooth.

        Heat about 2 inches of vegetable oil in a deep pan to 350°F (175°C).

          Transfer the dough into a piping bag fitted with a star nozzle.

            Pipe small bite-sized churro shapes (about 2-3 inches long) directly into the hot oil, being careful not to crowd the pan. Fry until golden brown, about 2-3 minutes each side.

              Remove with a slotted spoon and drain on paper towels.

                In a small bowl, combine the granulated sugar and ground cinnamon. Toss the warm churro poppers in the cinnamon-sugar mixture until coated.

                  Serve warm with a drizzle of chocolate sauce for dipping.
