Ingredients

For the Churro Base:

1 cup all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

For the Cheesecake Layer:

8 oz cream cheese, softened

1/3 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

For the Topping:

1/4 cup granulated sugar

1 teaspoon ground cinnamon

1/4 cup unsalted butter, melted

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease or line an 8x8-inch baking pan with parchment paper, allowing some overhang for easy removal.

Make the Churro Base: In a medium bowl, whisk together the flour, baking powder, and salt. In another bowl, cream together the softened butter and sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Spread this mixture evenly in the prepared baking pan.

Prepare the Cheesecake Layer: In a large bowl, beat the softened cream cheese until smooth. Add the sugar, egg, vanilla extract, and ground cinnamon, mixing until creamy and smooth. Pour the cheesecake mixture over the churro base in the baking pan, spreading it out evenly.

Bake: Bake in the preheated oven for 25-30 minutes, or until the cheesecake is set and the edges start to gently pull away from the pan. A slight jiggle in the center is okay, as it will firm up while cooling.

Cool and Slice: Once baked, remove the pan from the oven and let it cool at room temperature for about 15 minutes. Transfer to the fridge and chill for at least 2 hours before cutting into bars.

Finalize with Cinnamon Sugar Topping: In a small bowl, combine 1/4 cup granulated sugar and 1 teaspoon of ground cinnamon. Brush the tops of the chilled cheesecake bars with melted butter, then sprinkle generously with the cinnamon sugar mixture.

Serve: Slice the cheesecake into bars, serve cold, and enjoy this delicious fusion of churros and cheesecake!
