Chorizo & Potato Egg Casserole

Ingredients
  

1 lb chorizo sausage, casing removed

4 medium potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

6 large eggs

1 cup milk

1 cup shredded cheddar cheese

1 teaspoon paprika

1 teaspoon cumin

Salt and pepper to taste

1 tablespoon olive oil

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and cook until golden brown and tender, about 10-12 minutes. Stir occasionally to prevent sticking.

      Add the chopped onion and minced garlic to the skillet with the potatoes, cooking until the onion becomes translucent, about 3-4 minutes.

        Push the vegetable mixture to the side of the skillet and add the chorizo. Break it apart with a spoon and cook until browned and cooked through, about 7-8 minutes. Mix everything together once cooked.

          In a large bowl, whisk together the eggs, milk, paprika, cumin, salt, and pepper until well blended.

            Remove the skillet from heat and spread the chorizo and potato mixture evenly in a greased 9x13-inch baking dish. Pour the egg mixture over the top, ensuring it covers all the ingredients.

              Sprinkle the shredded cheddar cheese evenly over the casserole.

                Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the top is golden brown.

                  Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro before serving.
