Chocolate Lava CakeRecipe

Ingredients
  

1/2 cup (115g) unsalted butter

1 cup (170g) semi-sweet chocolate chips

2 large eggs

2 large egg yolks

1/4 cup (50g) granulated sugar

2 tablespoons all-purpose flour

1 teaspoon vanilla extract

Pinch of salt

Powdered sugar (for dusting)

Vanilla ice cream (for serving, optional)

Instructions
 

Preheat your oven to 425°F (220°C). Grease four ramekins (6 oz capacity) with butter and lightly dust them with flour, tapping out the excess. This will help the cakes release easily after baking.

    In a microwave-safe bowl, melt the unsalted butter and semi-sweet chocolate chips together. Heat in 30-second intervals, stirring after each, until smooth and fully melted. Set aside to cool slightly.

      In a separate mixing bowl, whisk together the eggs, egg yolks, and granulated sugar until thickened and pale in color (about 2-3 minutes).

        Stir in the melted chocolate mixture into the egg mixture, combining well.

          Sprinkle in the flour, vanilla extract, and a pinch of salt. Gently fold until just combined; be careful not to overmix.

            Pour the batter evenly into the prepared ramekins, filling them about 2/3 full.

              Bake in the preheated oven for 12-14 minutes or until the edges are firm, but the center is still soft and slightly jiggly.

                Once baked, let the cakes cool for 1 minute before running a knife around the edges to loosen them. Invert the ramekins onto serving plates and gently lift them off.

                  Dust with powdered sugar and serve immediately. If desired, scoop a scoop of vanilla ice cream on the side to complement the warm chocolate center.
