1 cup semi-sweet chocolate chips

1/2 cup unsalted butter

1/2 cup granulated sugar

1/4 cup packed brown sugar

2 large eggs

1 teaspoon vanilla extract

3/4 cup all-purpose flour

1/4 cup unsweetened cocoa powder

1/4 teaspoon salt

1/2 teaspoon baking powder

12 small squares of chocolate or chocolate truffles (for the lava center)

Powdered sugar (for dusting)

Instructions
 

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Melt the chocolate and butter together in a microwave-safe bowl or over a double boiler. Stir until smooth, then allow to cool slightly.

      In a large mixing bowl, whisk together granulated sugar, brown sugar, and the melted chocolate mixture until combined.

        Add eggs one at a time, beating well after each addition, followed by the vanilla extract.

          In another bowl, sift together flour, cocoa powder, salt, and baking powder. Gradually combine the dry ingredients with the wet ingredients until just combined. Be careful not to overmix.

            Using a cookie scoop or tablespoon, drop a spoonful of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.

              Press a chocolate square or truffle into the center of each dough ball, covering it with a little extra dough if needed.

                Bake in the preheated oven for 10-12 minutes, until the edges are set but the center remains soft. The cookies will continue to cook slightly as they cool.

                  Once out of the oven, allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

                    Dust with powdered sugar before serving for a beautiful finishing touch.
