1 ½ cups chocolate cookie crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

3 (8 oz) packages cream cheese, softened

3 large eggs

8 oz semi-sweet chocolate, melted and cooled

½ cup sour cream

For the fudge topping:

1 cup heavy cream

8 oz semi-sweet chocolate, chopped

2 tablespoons unsalted butter

Sea salt, for garnish (optional)

For the truffles:

6 oz semi-sweet chocolate, chopped

¼ cup heavy cream

Cocoa powder or crushed nuts for dusting (optional)

Instructions
 

Prepare the crust:

    - Preheat the oven to 350°F (175°C).

      - In a bowl, combine chocolate cookie crumbs, melted butter, and sugar until the mixture resembles wet sand.

        - Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

          - Bake for 10 minutes, then allow to cool while preparing the filling.

            Make the cheesecake filling:

              - In a large mixing bowl, beat the softened cream cheese until smooth and fluffy.

                - Gradually add the sugar and vanilla, continuing to beat until well combined.

                  - Add the eggs one at a time, mixing gently after each addition.

                    - Pour in the melted chocolate and sour cream, and mix until smooth.

                        Bake the cheesecake:
