Ingredients
  

2 boxes (14 oz each) of graham crackers

2 cups heavy whipping cream

1 cup powdered sugar

2 teaspoons vanilla extract

1 package (3.9 oz) instant chocolate pudding mix

3 cups cold milk

1 cup semi-sweet chocolate chips

3 tablespoons unsalted butter

Pinch of salt

Instructions
 

In a large bowl, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form. This will serve as your whipped topping.

    In another bowl, prepare the instant chocolate pudding mix according to package instructions, using cold milk. Mix until thickened and well combined.

      In a shallow dish, assemble the cake by dipping one side of a graham cracker into milk quickly and layering it on the bottom of a 9x13 inch baking dish. Repeat until the bottom is covered.

        Spread half of the chocolate pudding over the layer of graham crackers, followed by half of the whipped cream mixture.

          Repeat the layers by adding another layer of dipped graham crackers, the remaining chocolate pudding, and then the rest of the whipped cream mixture.

            For the chocolate ganache, combine the chocolate chips, butter, and a pinch of salt in a microwave-safe bowl. Heat in 30-second intervals, stirring until smooth and combined.

              Pour the chocolate ganache over the top of the cake, spreading it evenly.

                Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld and the graham crackers to soften.

                  Before serving, you can garnish with chocolate shavings or whipped cream if desired.
