Chocolate Covered Cherry Brownie Bombs

Ingredients
  

1 box of brownie mix (plus ingredients specified on the box)

1 cup of maraschino cherries, drained and patted dry

8 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

8 oz semi-sweet chocolate chips

1 tsp coconut oil (optional for smooth melting)

Sprinkles or crushed nuts (for garnish)

Prepare Brownies: Preheat your oven according to the instructions on your brownie mix box. Grease a 9x9-inch baking pan. Prepare the brownie mix as directed on the box and bake until a toothpick inserted comes out with moist crumbs (usually 20-25 minutes). Allow to cool completely.

    Make the Cherry Filling: While the brownies are baking, in a medium bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

      Form the Brownie Bombs: Once the brownies are completely cooled, crumble them into a large mixing bowl. Gradually add the cream cheese mixture and blend until fully combined. The mixture should be moist but firm enough to form balls.

        Insert the Cherries: Take a tablespoon of the brownie mixture and flatten it in your hand. Place a maraschino cherry in the center and encase it by rolling it into a ball. Repeat until all the mixture is used. Place the brownie bombs on a baking sheet lined with parchment paper and freeze for about 30 minutes to firm up.

          Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.

            Coat the Brownie Bombs: Dip each frozen brownie bomb into the melted chocolate, allowing excess chocolate to drip off, and place back onto the parchment-lined baking sheet.

              Garnish and Set: Before the chocolate sets, sprinkle tops with sprinkles or crushed nuts for decoration. Once all the bombs are coated, refrigerate for at least 15 minutes to allow the chocolate to harden.
