For the Cookie Dough Layer:

1 cup all-purpose flour

½ cup unsalted butter, softened

½ cup granulated sugar

¼ cup packed brown sugar

1 teaspoon vanilla extract

1/4 teaspoon salt

½ cup mini chocolate chips

2 tablespoons milk

For the Cheesecake Layer:

2 (8 oz) packages cream cheese, softened

½ cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1 cup sour cream

1/4 cup heavy cream

½ cup mini chocolate chips

For the Graham Cracker Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

Instructions
 

Prepare the Crust:

    Preheat your oven to 325°F (160°C). In a medium mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for about 8-10 minutes until lightly golden. Let it cool completely.

      Make the Cookie Dough:

        In a bowl, mix together the softened butter, granulated sugar, brown sugar, and vanilla extract until smooth. Gradually add the flour and salt, mixing until combined. Stir in the mini chocolate chips and milk until a dough forms. Set aside.

          Prepare the Cheesecake Mixture:

            In a large mixing bowl, beat the softened cream cheese on medium speed until smooth. Gradually add the sugar and vanilla extract, mixing until combined. Add in the eggs, one at a time, mixing just until incorporated after each addition. Mix in the sour cream and heavy cream until smooth.

              Combine Layers:

                Fold in ½ cup of mini chocolate chips into the cheesecake mixture. Pour half of the cheesecake batter into the cooled crust, and drop spoonfuls of the cookie dough mixture on top (reserve some dough for topping if desired).
