1 cup (2 sticks) unsalted butter, softened

3/4 cup granulated sugar

3/4 cup brown sugar, packed

1 large egg

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1 cup chocolate chips

16 oz cream cheese, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/4 cup sour cream

1/2 cup chocolate chips (optional, for topping)

Preheat the Oven: Preheat your oven to 325°F (160°C) and line a 9x13-inch baking pan with parchment paper, leaving some overhang for easy removal.

    Make the Cookie Layer: In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth. Add in the egg and vanilla extract, mixing until well combined.

      Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined. Fold in the chocolate chips until evenly distributed.

        Bake the Cookie Base: Press about 2/3 of the cookie dough into the bottom of the prepared baking pan to create an even layer. Bake in the preheated oven for 10-12 minutes until just set and barely golden at the edges. Remove from the oven and let cool slightly.

          Prepare the Cheesecake Filling: In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar and continue to beat until incorporated.

            Add Eggs and Sour Cream: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until combined and smooth.

                Add Remaining Cookie Dough: Crumble the remaining cookie dough generously over the cheesecake filling. It doesn’t have to cover it completely; you want some cheesecake peeking through. If desired, sprinkle the optional chocolate chips on top.

                  Bake Again: Return the pan to the oven and bake for an additional 25-30 minutes, or until the cheesecake is set and the cookie topping is lightly golden. The center may still jiggle slightly but will firm up as it cools.

                    Cool and Chill: Remove from the oven and let cool at room temperature for about 30 minutes. Then, cover and refrigerate the bars for at least 2-3 hours or until fully chilled and set.
