1 cup ripe bananas (about 2-3 medium bananas, mashed)

1/3 cup melted coconut oil or unsalted butter

1/2 cup brown sugar (packed)

1/4 cup granulated sugar

1 large egg

1 tsp pure vanilla extract

1 tsp baking soda

1/2 tsp baking powder

1/4 tsp salt

1 1/2 cups all-purpose flour

1 cup semi-sweet chocolate chips (plus a few extra for topping)

1/2 tsp cinnamon (optional)

Instructions
 

Preheat and Prepare: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with non-stick spray.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, melted coconut oil (or butter), brown sugar, and granulated sugar. Whisk until smooth. Add the egg and vanilla extract, mixing until fully incorporated.

      Combine Dry Ingredients: In another bowl, whisk together the baking soda, baking powder, salt, all-purpose flour, and cinnamon (if using).

        Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are fine. Fold in the chocolate chips, reserving a handful for topping.

          Fill Muffin Tin: Evenly distribute the batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle the reserved chocolate chips on top of the muffins for extra gooeyness.

            Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with just a few crumbs.

              Cool: Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes. Then, transfer them to a wire rack to cool completely.
