Chocolate Chip Banana Muffins – Soft & Moist!

2 ripe bananas, mashed

1/3 cup melted coconut oil or unsalted butter

1/2 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup all-purpose flour

1/2 cup semi-sweet chocolate chips

Optional: 1/4 cup chopped walnuts or pecans

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with cooking spray.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas with the melted coconut oil (or butter). Mix well until smooth. Incorporate the brown sugar and stir until fully combined. Add the egg and vanilla extract, mixing until the mixture is homogeneous.

      Combine Dry Ingredients: In another bowl, whisk together the baking soda, baking powder, salt, and all-purpose flour.

        Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients. Stir gently until just combined—do not overmix! It’s okay if there are a few small lumps remaining.

          Fold in Chocolate Chips: Gently fold in the semi-sweet chocolate chips and, if using, the chopped nuts.

            Fill Muffin Cups: Using a spoon or ice cream scoop, fill each muffin cup about 2/3 of the way full.

              Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean or with a few crumbs (not wet batter).

                Cool: Remove the muffins from the oven and allow them to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
