At the heart of our Choco-Banana Bliss Muffins are ripe bananas. These fruits not only contribute natural sweetness but also provide moisture, which is essential for achieving a tender texture in baked goods. The riper the banana, the more intense its flavor; thus, opting for bananas that are speckled with brown spots is ideal. They will blend seamlessly into the batter, creating a deliciously moist muffin.

Ingredients

2 ripe bananas, mashed

1/3 cup melted butter

1/2 cup brown sugar

1/4 cup granulated sugar

1 large egg, beaten

1 teaspoon vanilla extract

1 teaspoon baking soda

Pinch of salt

1 cup all-purpose flour

1/2 cup semi-sweet chocolate chips

1/2 teaspoon ground cinnamon (optional)

1/4 cup chopped walnuts (optional)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas with the melted butter. Stir in the brown sugar and granulated sugar until well mixed. Add the beaten egg and vanilla extract, and mix until combined.

Add Dry Ingredients: Sprinkle the baking soda and salt over the banana mixture, and then gently mix in the ground cinnamon if you're using it. Gradually fold in the flour until just combined. Avoid overmixing; a few lumps are okay!

Fold in Chocolate and Nuts: Gently fold in the chocolate chips and chopped walnuts (if using) into the batter until evenly distributed.

Fill Muffin Tin: Divide the muffin batter evenly among the prepared muffin cups, filling each about 2/3 full. Optional: sprinkle a few extra chocolate chips on top of each muffin for added appeal.

Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Cool and Enjoy: Let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy these delightful muffins warm or at room temperature!
