Ingredients
  

2 cups cooked, shredded chicken (preferably roasted or grilled)

3 cups mixed salad greens (romaine, spinach, and arugula)

1 cup mandarin orange segments (fresh or canned, drained)

1 cup shredded carrots

1/2 cup sliced almonds (toasted for extra crunch)

1/2 cup red bell pepper, thinly sliced

1/4 cup green onions, chopped

1/4 cup cilantro leaves, roughly chopped

For the Dressing:

1/4 cup rice vinegar

3 tablespoons soy sauce

2 tablespoons sesame oil

1 tablespoon honey or agave syrup

1 teaspoon freshly grated ginger

Salt and pepper to taste

Prepare the Dressing: In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, and grated ginger. Season with salt and pepper to taste. Set aside to let the flavors meld.
