Ingredients

4 salmon fillets (6 oz each)

2 tablespoons honey

2 tablespoons fresh lime juice

1 tablespoon soy sauce

1 teaspoon chili powder

2 cloves garlic, minced

1 tablespoon olive oil

Zest of 1 lime

Salt and pepper to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Prepare the Marinade: In a mixing bowl, combine the honey, lime juice, soy sauce, chili powder, garlic, olive oil, and lime zest. Whisk until well mixed and slightly thickened.

Marinate the Salmon: Place the salmon fillets in a resealable plastic bag or a shallow dish. Pour the marinade over the salmon, ensuring each fillet is well coated. Seal the bag or cover the dish, and marinate in the refrigerator for at least 30 minutes (up to 2 hours for deeper flavor).

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Bake the Salmon: Remove the salmon from the marinade, allowing any excess marinade to drip off. Place the fillets skin-side down on the prepared baking sheet. Season with salt and pepper. Bake the salmon in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork and is cooked through.

Reduce the Marinade: While the salmon is baking, pour the remaining marinade into a small saucepan. Bring to a boil over medium heat and then reduce to a simmer. Cook for about 5-7 minutes until the sauce thickens slightly.

Glaze the Salmon: Once the salmon is done, remove it from the oven and brush generously with the thickened marinade for a glossy finish.

Serve: Plate the salmon, garnish with fresh cilantro, and serve with lime wedges on the side for an added zest.
