Chicken Parm Quesadilla

2 boneless, skinless chicken breasts

1 cup marinara sauce

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

4 large flour tortillas

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 tablespoons olive oil

Fresh basil leaves (for garnish)

Instructions
 

Cook the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. In a skillet over medium heat, add 1 tablespoon of olive oil. Cook the chicken for about 6-7 minutes on each side until fully cooked. Remove from heat and let it rest for a few minutes before slicing it into thin strips.

    Prepare the Tortilla Filling: In a bowl, mix the cooked chicken strips with ½ cup of marinara sauce, half of the mozzarella cheese, and half of the Parmesan cheese. Combine well until the chicken is coated in the sauce and cheeses.

      Assemble the Quesadilla: Heat a clean skillet over medium heat and add 1 tablespoon of olive oil. Place one tortilla in the skillet. Spread half of the chicken mixture over one half of the tortilla. Top with the remaining mozzarella and Parmesan cheese, then fold the tortilla over.

        Cook the Quesadilla: Cook the quesadilla for about 3-4 minutes on each side, or until golden brown and crispy. Use a spatula to press down lightly for even cooking. Remove from the skillet and let it cool for a minute before slicing it into triangles.

          Serve: Drizzle additional marinara sauce on top of the quesadilla slices, garnish with fresh basil, and serve immediately.
