Ingredients
  

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, sliced

2 celery stalks, chopped

8 cups low-sodium chicken broth

2 cups cooked chicken, shredded (preferably rotisserie)

1 teaspoon dried thyme

1 bay leaf

Salt and pepper to taste

5 ounces egg noodles

2 cups fresh spinach (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add the sliced carrots and chopped celery to the pot, and sauté for about 5-7 minutes until the vegetables soften.

        Pour in the chicken broth and bring to a gentle boil. Add the shredded chicken, thyme, bay leaf, salt, and pepper. Reduce the heat and let it simmer for 15 minutes.

          While the soup simmers, cook the egg noodles in a separate pot according to package instructions until al dente. Drain and set aside.

            If using, add the fresh spinach to the soup during the last 2 minutes of simmering to wilt it.

              Stir in the cooked egg noodles and remove the bay leaf. Taste and adjust seasoning if necessary.

                Serve hot, garnished with fresh parsley.
