Ingredients

2 cups shredded hashbrowns (frozen)

2 cups cooked, shredded chicken (rotisserie chicken works great!)

1 cup cheddar cheese, shredded

1 cup cream of chicken soup

1/2 cup sour cream

1/2 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon black pepper

1/2 teaspoon salt (adjust to taste)

1 cup corn (canned or frozen)

1/2 cup green onions, chopped (for garnish)

1/2 cup bread crumbs (optional, for topping)

2 tablespoons olive oil or melted butter (for bread crumbs, if using)

Instructions

Preheat the oven to 350°F (175°C). Grease a 9x13 inch casserole dish with cooking spray or a little olive oil.

Prepare the hashbrowns: If using frozen hashbrowns, let them sit out for a few minutes to thaw slightly. Spread the hashbrowns evenly in the bottom of the prepared casserole dish.

Combine the wet ingredients: In a large mixing bowl, combine the cream of chicken soup, sour cream, garlic powder, onion powder, paprika, black pepper, and salt. Mix until well combined.

Add chicken and corn: Stir in the shredded chicken and corn into the mixture. Make sure everything is well coated with the creamy mixture.

Layer the casserole: Pour the chicken mixture over the hashbrowns in the casserole dish. Spread it evenly across the top.

Top with cheese: Sprinkle the shredded cheddar cheese evenly over the chicken mixture.

Add breadcrumbs (optional): If you like a crispy topping, mix the bread crumbs with olive oil or melted butter and sprinkle over the cheese layer.

Bake: Place the casserole in the preheated oven. Bake for 40-45 minutes or until the edges are bubbly, and the top is golden brown. If you used bread crumbs, they should be crunchy and slightly toasted.

Garnish and serve: Once out of the oven, let it sit for about 5 minutes to set. Garnish with chopped green onions before serving for an extra pop of color and flavor.

Enjoy: Serve hot as a main dish or as a hearty side! Perfect for family gatherings or meal prep.
