4 boneless, skinless chicken breasts

1 cup buttermilk

2 teaspoons hot sauce (optional)

1 ½ cups all-purpose flour

1 teaspoon baking powder

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust for heat preference)

Salt and black pepper to taste

Oil for frying (such as peanut or vegetable oil)

Marinate the Chicken: In a large bowl, mix together the buttermilk and hot sauce. Add the chicken breasts, making sure they are well-coated. Cover and refrigerate for at least 2 hours or overnight for best results.

    Prepare the Coating: In a separate bowl, whisk together the flour, baking powder, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper until well combined.

      Dredge the Chicken: Remove the marinated chicken from the refrigerator. Let excess marinade drip off, then dredge each piece in the seasoned flour until thoroughly coated. Press lightly to ensure the flour sticks well. Place on a wire rack and let rest for 10-15 minutes.

        Heat the Oil: In a large cast-iron skillet or heavy-bottomed pot, add enough oil for deep frying (about 1 ½ inches deep). Heat the oil over medium-high heat until it reaches 350°F (175°C). You can test it by dropping a bit of flour into the oil; it should sizzle immediately.
