Chicken Fajita Casserole

1 lb boneless, skinless chicken breasts, sliced into thin strips

1 tablespoon olive oil

1 medium onion, sliced

1 red bell pepper, sliced

1 green bell pepper, sliced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 can (14 oz) diced tomatoes, undrained

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (canned or frozen)

8 small tortillas (flour or corn)

2 cups shredded cheese (cheddar or a Mexican blend)

Fresh cilantro, for garnish (optional)

Lime wedges, for serving

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Chicken: In a large skillet over medium heat, add olive oil. Once hot, add the sliced chicken and season with chili powder, cumin, smoked paprika, salt, and pepper. Cook for about 5-7 minutes until the chicken is cooked through and no longer pink. Remove chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add onions and bell peppers. Sauté for 4-5 minutes until they begin to soften. Add the minced garlic and cook for an additional minute until fragrant.

        Combine Ingredients: To the skillet, add the cooked chicken, diced tomatoes (with juices), black beans, and corn. Stir well to combine all flavors. Allow the mixture to simmer for about 2-3 minutes.

          Layer Casserole: In a greased 9x13-inch casserole dish, layer half of the tortillas, tearing them to fit if necessary. Spoon half of the chicken mixture over the tortillas. Add 1 cup of shredded cheese on top. Repeat with the remaining tortillas, chicken mixture, and finish with the remaining cheese.

            Bake Casserole: Cover the casserole with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.

              Serve: Remove from the oven and let it cool slightly. Garnish with fresh cilantro, if desired, and serve with lime wedges on the side.
