2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 pound boneless, skinless chicken breasts

1 can (14.5 oz) diced tomatoes with green chilies

4 cups chicken broth

1 cup corn kernels (fresh or frozen)

1 can (15 oz) black beans, rinsed and drained

2 tablespoons enchilada sauce

2 teaspoons chili powder

1 teaspoon cumin

Salt and pepper to taste

1 cup shredded cheddar cheese

Fresh cilantro, chopped (for garnishing)

Sour cream (for serving)

Lime wedges (for serving)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until soft and translucent, about 3-4 minutes.

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Add the chicken breasts into the pot and pour in the diced tomatoes with chilies, chicken broth, corn, black beans, enchilada sauce, chili powder, cumin, salt, and pepper. Stir well to combine.

        Bring the mixture to a gentle boil, then reduce the heat to low and cover the pot. Let it simmer for about 20-25 minutes, or until the chicken is cooked through and tender.

          Carefully remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the soup and stir to combine.

            Simmer the soup for an additional 5 minutes to allow the flavors to meld.

              Serve hot in bowls, topped with shredded cheddar cheese, fresh cilantro, a dollop of sour cream, and a squeeze of lime juice.
