2 boneless, skinless chicken breasts

1 cup breadcrumbs (panko for extra crunch)

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (optional)

Vegetable oil for frying

Prepare the Chicken: Place the chicken breasts between two sheets of plastic wrap. Using a meat mallet or rolling pin, pound them to a uniform thickness (about 1/2 inch) for even cooking.

    Marinate: Season the chicken with salt, pepper, garlic powder, onion powder, and paprika. Let it marinate for at least 30 minutes to absorb the flavors.

      Set Up Breading Station: Prepare three shallow bowls. In the first bowl, place the flour. In the second bowl, beat the eggs. In the third bowl, combine breadcrumbs, smoked paprika, and chopped parsley.

        Coat the Chicken: Dredge each chicken breast in flour, shaking off the excess. Then dip it into the beaten eggs, allowing any excess to drip off. Finally, coat it thoroughly in the breadcrumb mixture, pressing gently to adhere.

          Heat Oil: In a large frying pan, heat about 1/4 inch of vegetable oil over medium-high heat until it shimmers.

            Fry the Cutlets: Carefully add the chicken cutlets to the hot oil, cooking in batches if necessary. Fry for 4-5 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

              Drain and Rest: Remove the cutlets from the pan and place them on paper towels to drain excess oil. Let them rest for a few minutes.
